Appearance: Deep vibrant magenta with purple hues.

Bouquet: Intense raspberry, plum, clove & charcuterie aromas with subtle oak.

Palate: A full-bodied wine with mouth-filling plum and spice flavors accompanied by weighty mid-palate fruit, balanced acidity, and firm but integrated tannins.

Vintage Conditions: The 2010 vintage was warm and mild with very dry conditions continuing through the season. This coupled with very low yields ensured fruit reached optimum maturity prior to harvest.

Winemaking: Fruit was sourced from very select mature vineyards across a number of sub-regions of McLaren Vale, ranging from the warmer central area to the Willunga foothills through to the cooler Blewitt Springs pocket. The fruit was harvested in the cool of the morning and immediately transferred to the winery. The grapes were gently destemmed to preserve aroma and regional expression. Destemmed fruit was gently moved to a mix of open & static fermenters. Post-cool maceration, fermentation was initiated using selected yeasts. The wine was plunged minimally throughout this period in order to avoid over-extraction of tannin. Fermentation temperatures peaked in the low 30’s, resulting in the retention of color & texture.

Wine Analysis: Alc/Vol : 14.5% pH : 3.47 TA : 6.6 g/L

Cellaring: Will continue to develop over the next 6-10 years with careful cellaring.

Suggested Cuisine: Aged rib-eye steak.
