Varieties:90% Shiraz 10% Cabernet Sauvignon

Viticulture: The Shiraz is grown on clay loam soils. The vines are 15 years old and are trained to a single cordon with two foliage wires. The Cabernet Sauvignon is planted on clay loam soil with a thin top layer of limestone pebbles. The vines are 10 years old and are also trained to a single cordon with foliage wires.

Vinification: Both the Shiraz and Cabernet grapes were harvested at 12.5Be. The must be fermented at temperatures between 18 and 25 degrees in order to help extract flavour and colour components from the grape skins. The skins were then gently pressed, with only the free-run fraction being kept ensuring that only soft tannins would be present in the final wine. The wine was then stored on French oak staves for a few months prior to bottling.

Winemaker’s Tasting Note: Subtle aromas of raspberry and spicy fruit on the nose. A flavoursome palate with savoury blackcurrant and ripe plum characters, integrated with lingering vanillin oak flavours.

Serving Suggestions: Excellent as an aperitif, or serve with seafood, poultry or light dishes
